Betsy and Simon met at the prestigious Culinary Institute of America in Hyde Park, New York and their travels took them through the country's best kitchens. Betsy studied under lauded Pastry Chef Francisco Migoya, worked in Chef Thomas Keller's Bouchon Bakery and was appointed bread baker for The French Laundry. Simon spent time learning in the kitchens of Chef Daniel Boulud at Daniel in New York City and Chef Thomas Keller at his famed Napa restaurant the French Laundry.
